    Out of interest, is it possible to start a ne culture somehow on its own without a starter culture? I vaguely recall reading something about this a couple of years back.

    I read it too. On a Ripley's believe it or not article, it says leave an apple for 30days in apple cider vinegar and you will get a culture. Please let me know if you attempt this with any success as I want some but cannot get a culture here
