Hi AllI have wanted to setup a community tank with unusual critters for some time now.Does any one have experience or any advice on fresh water stone fish?

Firstly,they ae not Freshwater,But Brackish.... Have never heard of one that even looks at prepared food,so start breeding some Goldfish or something for him to munch.... When you buy one,the trick is to get it to feed - many just refuse and starve themselves to death... Small tankmates is a no no as they will be eaten

I seem to remember reading somewhere that there is a species from the Amazon. I would imagine that it would be fresh water.

It would be highly predatory so is best suited for a species only tank

There are examples of freshwater species, as Reedfish has brought up. These, too, pretty much never eat dead food. I wouldn't recommend keeping them with any tankmates, as they'll either be eaten or out-compete the stonefish for food..
